Taco Soup
Ingredients
- 1/2 lb ground beef (or turkey)
- 1/4 c diced onion
- 1 t vegetable oil
- 3/4 t Salt (Table)
- 1/8 t chili powder
- 3/8 t black pepper
- 3/8 t cumin
- 1/8 t oregano
- 1 pinch crushed red pepper flakes
- 1/4 t smoked paprika
- 15 oz canned diced tomato
- 8 oz chicken stock (low sodium)
- 1/2 c corn (fresh, canned, or frozen)
- 1/2 jalapeno pepper (optional; or chipotle if you have it)
- 1 c beans (pinto, red, or black)
- 14 g Corn Starch / Corn Flour
- 2 T water
- 1/2 T lime juice (or 1/2 t vinegar)
- Garnishes:
- corn tortillas (cut in strips and fried or baked)
- avocado
- sour cream
- cheddar cheese
Method
In a medium to large soup pot, brown ground beef and onion in the vegetable oil. Add all remaining ingredients except corn starch, water, and lime juice. Let simmer over medium heat until mixture comes to a light boil. Mix water into corn starch to form a slurry; drizzle into soup while stirring to thicken. Add lime juice and taste. Add more seasonings to taste.

Notes from source: This soup is pretty versatile. You can substitute chicken for the beef, or just leave it out and add more beans. You can add more vegetables. You can buy tortilla chips instead of frying up some cut up tortilla's...but it is a great way to get rid of those few tortilla shells laying in your fridge!
SJ Note 18 Jan 2011: Good, but too spicy and rather thick. I've made adjustments accordingly. Definitely a keeper!
